Confetti Slaw
Ingredients:
2 cups shredded green cabbage
2 cups red cabbage
3 medium carrots
½ cup chopped red onion
½ teaspoons salt
¼ cup of fresh chopped parsley.
Directions:
Combine green and red cabbage in a large bowl. Sprinkle with salt and set aside for 1 hour.
Meanwhile, peel and shred carrots.
Add carrots, onion, and parsley to cabbage. Then add dressing (recipe below) and toss to coat.
Dressing:
Ingredients:
3 tablespoons cider vinegar
1 tablespoons honey
2 tablespoons mustard
1 tablespoon celery seeds
Freshly ground black pepper to taste
2 tablespoons extra-virgin olive oil
Directions:
In a small bowl, whisk together vinegar, honey, mustard, celery seed and black pepper. Gradually whisk in the olive.
